PASTA AL POMODORO

INGREDIENTS

  • Pasta
  • Red cherry tomatoes
  • Garlic
  • Hot chili pepper
  • Basil leaves
  • Greek black pitted olives
  • Fresh ricotta cheese
  • Extra virgin olive oil
  • Coarse sea salt

DIRECTIONS

Cut in half the cherry tomatoes and let them sun-dry for one day.
Put the sun-dried tomatoes in a bowl with a pinch of salt, garlic and hot chili pepper.
Cook the pasta of your choice al dente.
Drain the pasta and put into a serving bowl.
Add the tomato sauce and mix.
Before serving add the fresh basil leaves and extra virgin olive oil to taste.
Serve with fresh ricotta cheese (or small cubes of feta cheese) on the side.
